Bleach is awful, like most shounen animu. Watching JoJo recently has reminded me just how shitty most shounen is. You get used to the shitty tournaments and super saiyan bullshit in normal shounen. It takes something interesting to make you realize how bad and stale the genre is. Shoujo probably isn't any different, but I don't watch it because it's just shounen cliche bullshit except with stuff girls stereotypically like. Imagine a soap opera mixed with animu cliches.
Narutard is a good example (along with DBZ) of a series that should have ended naturally but wasn't allowed to. It's impossible to make something good when money is arbitrarily dictating that you drag your story out way past its natural conclusion. Hell, the Pain arc was probably when I would have said to end that shit, if not before, because Pain was like the natural opposite to Narutard in every way. Like foxboy, he had been "destined for some good shit" as a natural ninja supersaiyan and he'd had a hard life growing up. But he never had reliable adults in his life to help him (not even Jiraiya when you really think about it) and he experienced loss far beyond what Naruto ever did, which changed him into a "villain." They even parallel the "band of three friends" theme in the Pain arc. Going from that to the FUCKING AWFUL ninja war was a jarring descent in quality even by the standards of Narutard.
Bleach is just bad though. I'd say it's bad even compared to other bad shounen like Naruto. The new current shitty shounens are My Hero Academia (which is ok I guess, I mean it's better than Bleach) and shit like World Trigger (also not very good.)
A lot of these modern shounen now try to get by purely on the strength of the fights. Hokuto no Ken was melodramatic, but at least it had heart.

One Piece is this weird case where it took incredibly long for the manga to find its footing and it's been really good since. Oda found his strength late into the run when he realized Jump wasn't going to let him quit working on it any time soon. Sometimes I wonder if the absurd amount of story connections and foreshadowing done are just because he'd otherwise get bored still working on the same thing for so long.
The anime is unwatchable garbage made for a quick buck with as much filler as they could possibly fit in though.

As for the anime it's not so much filler as it is Toei trying to stretch 20 pages into 20 minutes of an episode. It's worse than filler because it isn't really skippable.

The art for One Piece always pissed me off. It struck me as impressively shit even compared to garbage like Naruto. You've got Araki on the one end and One Piece on the other.

In the guide "Even a Monkey can Draw Manga" they quite clearly define that the biggest problem any Shonen faces is scaling. At some point your plucky adventurer is fighting The Fight of His Life, so the next time he has to fight The Fight of His Life, the enemy has to be bigger and betterer or else there's no point to it (Power level bullshittery. I think the onlyseries that worked around this crutch was Yu Yu Hakusho).
One Piece as a series that should not end becase, no matter how incredible the One Piece may be, by the pace the villains are appearing, it has to be Super Mega Kami God Desu just to match up to the guy from the earlier panel. And besides, at one point Zoro lifted and threw a house over his head. And if you remember his backstory, his childhood friend broke her neck from falling down the stairs. I'm not autistic enough to fret over it but in a show where you can survive a thermonuclear blast with bandages and rubbing alcohol, snapping your neck should not even be possible.
