I beat Salt and Sanctuary roleplaying as Guts, actually. There's a couple of good Guts greatswords and you can make your guy look amusingly close to Guts by equipping a particular armor set. So that's what I did.

If you go with a guts build, I think the best religion is mountain lords. You get a gayme of thrones "pile o' swords" background at all your shrines and you eat loaves of bread to heal hp.

I think you mean "The Iron Ones". I actually picked that one on accident because that old geezer at the beach was asking me question about religion and I had no idea what the game wanted from me, because as it turns out the game explains pretty much nothing.

If you pick a religion and want to change later, you can. There are some religions you can only select later, as you progress in the game. The most optimal religion for most builds is probably the gold grubbing guild. Gold mask religion gives you absolutely broken buffs and requires no investment. Magic users have two optimal guilds, one for dark magic and one for general magic. The general magic one is the single hardest guild area to reach in the entire game. Hope you like the disappearing platforms in mega man!

Actually I guess my build was more Guts, I got the Jaws of Death aka giga scissors and wrecked shit, that charged attack is devastating. I dunno if I used a crossbow for authenticity though. I did try a whip Castlevania build but sucked at it, I’ve seen it done before and it’s amazing.

Hmm, I could do a Cloud build. Sub magic for materia and keep the strength. I could maybe even use that Northern Cross weapon.

I should do a simon belmont build next time I play. I've used the whipsword a lot in previous builds. The bloodborne hunter starting class gives armor good enough to last most of the game.
