Because he doesn't believe that. He KNOWS it on some level, the same way he always knew on some level the movie was never going to happen, but he refuses to acknowledge or admit it. He can't face the fact that The Experiment is Over, because he has nothing else. He's in perpetual can-kicking mode, clinging to the belief that he'll "get back to it someday once things get better." But then he does nothing to make things get better, so they never do, so he never does, lather, rinse, repeat. That's been the last five years of his life.

That could certainly be part of it, but, see, it would make sense for that to be the main reason, and how many of the decisions he's made over the past half-decade have risen to that level of making sense? For all his kvetching about money being a problem, he's certainly never taken action to maintain his income, even as it crashed and burned. See all the speculation about someone else bankrolling his life from behind the scenes.

Mainly, though, it really does feel like someone who can't let go of the past, can't admit (even to himself) that he's never going to do another video, and can't face the fact that his 15 minutes ended years ago. Remember, this whole thing was only ever a stepping stone to the Hollywood red carpet, so he can't officially pull the plug on it; that hasn't happened yet, after all.
