Just watch the TOS, movies 2,3,4 & 6, most of the middle seasons and the finally of TNG (they ran out of ideas in season seven) and DS9. Avoid Voyageur and Enterprise at all costs.

TNG is a series, luckily, with little canonical connection between episodes so you can watch all the necessary episodes without missing a lot.

I saw all the movies years ago, I look forward to revisiting them within the context of TOS.
TNG and Voyager I've both seen in bits and pieces, but I liked them both fine. Obviously TNG was superior, but Voyager wasn't a bad fast food substitute. It had the Doctor, it had Jeri Ryan, it was watchable.
I never saw DS9 because as a kid, I wasn't into the concept of "Star Trek on a space station", but I've heard a lot of good things about it(especially Worf's development), so I'm kind of hyped.
Enterprise was the first Trek I saw all the way through, my dad got me the complete collection of that. It wasn't great, but I have a lot of nostalgia for it and I like the more down-to-earth crew and rougher aesthetic. Scott Bakula is still the most likeable captain for me of the lot.

They have a corrupt council of politicians, on account of the fact none of the warriors want to deal with politics. DS9 goes in-depth on the matter. It's a matter for debate how good of a thing that is. I feel the Klingon episodes are some of the weakest in both TNG and DS9. Especially in DS9, the tonal shifts are jarring and the writing for Klingon characters (except Worf) suck. I'm also really not a fan of characters in Star Trek getting paired off like they do. Original Trek hinted that Kirk fucked around with some of the crew, but everyone else kept it mostly professional. Sure, some crewmen got married or whatever, but they were usually side characters and it didn't impact the professionalism of the crew. It always makes me rage when a show starts pairing people off so they can introduce soap opera relationship drama.

While I agree that relationship drama in a show is fucking gay and usually only done to try and draw in women viewers, from a purely logical standpoint I can understand it. We're supposed to buy that the crew of the ship basically live on the ship for an indeterminate period. In a situation like that, where you never get a chance really to meet non-work related people or have much of a life outside of work, there's only a limit to how far professionalism can go. Eventually even the most professional of crewmembers will be thinking 'Well, I can fuck my co-workers, or I can be alone for the rest of my life.
