A hollow Earth is unlikely because science can tell us that. A planet is a physical force we can analyze and make calculated hypotheses of.
God's existence on the other hand is utterly unknowable, therefore making it the one thing that you CAN be on the fence about. If real, God would be a force many many times beyond our capacity to understand.

There are plenty of things that are unknowable and that you can be on the fence about. But being an atheist already means that you don't believe in the existance of gods or higher powers. There's no being on the fence about the straight up question if you believe it or not.
The term "agnostic" only makes sense in being the opposite of being a believer of gnosticism. Every other definition is idiotic.

No, there isn't. Belief is not knowledge-based. Claiming that you only don't believe something because you have no knowledge doesn't mean anything. In the end you still don't believe and one can't be in a state of believing and not believing at the same time. The reason why you don't belive something doesn't matter.
A "I don't know" in regards to believing something is a "no" by default.
