They *tried* in Genisys. There's a few throwaway lines when they travel from the 80's into the future about why Arnold can't go with them and how he worked construction in the decades since.

This is my favorite time of year, when studios put out movies from festivals that either awful, up their own asses, forgettable or people think these things are master pieces, these oscar winning movies, yet no one will remember them after the oscars, or hell remember who even won the oscars

Terminators aging is stupid. They are just robots with skin on top. After a few days they should start rotting, not aging gracefully. Genisys Arnie could apparently grow new skin in a vat or something but what?!

I think it was explained in the original, because the tissue turns necrotic in that movie after the Terminator takes damage, or at least was intended to.
