There's one major difference. Those people have lives and careers outside of Youtube. They built up a real world skill set/business and then used Youtube to expand or profit off of it. You'll never hear James Townsend or Chef John lecture viewers on "this IS my JOB people!"

I have seen decent amount of "like/subscribe/give to Patreon/buy my merch" talk from the categories you mentioned. There's also a lot of sponsored content these days.
