Saying Jews are cheap and good with money is a stereotype with some truth to it.

Kugel is right that it's the fact that Jews tend to gravitate to certain occupations. So a lot of people's only experience with Jews is that one banker that foreclosed on their home, or that one lawyer that they had to pay a small fortune to.
